This setting can be changed by either editing the .pinerc in your home directory and changing the smtp-server option to smtp.fnal.gov or by using the menus inside Pine.

From the Pine main menu select Setup

Now select Config

Scroll down to smtp-server and hit return. Change the field to smtp.fnal.gov and hit return.

Hit E to exit

Hit Y to save changes

And you should be back to the main menu.
